  • Spinach & Ricotta: 1 cup fresh spinach (chopped), ½ cup ricotta cheese, ¼ cup grated Parmesan, 1 clove garlic (minced), salt, and pepper
  • Sun-Dried Tomato & Mozzarella: ½ cup chopped sun-dried tomatoes, 1 cup shredded mozzarella cheese, 1 tablespoon fresh basil (chopped), salt, and pepper

For the Coating:

  • ½ cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs (panko for extra crispiness)
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon dried herbs (such as oregano or thyme)
  • Salt and pepper to taste

For Frying:

  • 3 tablespoons olive oil (or vegetable oil)

Instructions

1. Prepare the Chicken Breasts:

  1. Using a sharp knife, slice each chicken breast horizontally almost all the way through, creating a pocket for stuffing. Be careful not to cut all the way through. Season the inside and outside of the chicken with salt and pepper.

  2. Choose your filling option:

    • For Spinach & Ricotta : Mix chopped spinach, ricotta, Parmesan, minced garlic, salt, and pepper in a bowl.
    • For Sun-Dried Tomato & Mozzarella : Combine chopped sun-dried tomatoes, shredded mozzarella, fresh basil, salt, and pepper in a bowl.
  3. Stuff each chicken breast generously with the filling of your choice. Secure the opening with toothpicks or tie with kitchen twine to keep the filling intact.

2. Set Up the Breading Station:

  1. Place the flour in a shallow dish. In another dish, beat the eggs. In a third dish, mix the breadcrumbs, garlic powder, paprika, dried herbs, salt, and pepper.
