Ingredients

Scale

For the Chicken Meatballs:

  • 1 lb ground chicken (or turkey)
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs (use gluten-free if needed)
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil (for cooking)

For the Orzo and Sauce:

  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 1 cup chicken broth
  • 1 cup orzo pasta
  • 1/2 cup heavy cream (optional, for creaminess)
  • 1/4 cup fresh basil, chopped (plus extra for garnish)
  • Salt and pepper to taste
  • Grated Parmesan cheese, for serving

Instructions

  1. Prepare the Meatballs: In a mixing bowl, combine the ground chicken, Parmesan, breadcrumbs, egg, garlic, oregano, basil, salt, and pepper. Mix gently until just combined. Form the mixture into 1-inch meatballs (about 20).

  2. Cook the Meatballs: Heat 1 tbsp olive oil in a large skillet or Dutch oven over medium heat. Add the meatballs and cook until browned on all sides and cooked through (about 6-8 minutes). Remove the meatballs and set aside.

  3. Sauté the Aromatics: In the same skillet, add another tablespoon of olive oil. Sauté the onion until softened (about 3-4 minutes), then add the garlic and cook for 1 minute until fragrant.

  4. Add Sauce Ingredients: Stir in the crushed tomatoes, chicken broth, and orzo. Bring the mixture to a boil, then reduce the heat to low.

  5. Simmer and Combine: Return the meatballs to the skillet, nestling them into the orzo mixture. Cover and simmer for 10-12 minutes, stirring occasionally, until the orzo is tender and the sauce has thickened.

  6. Finish with Cream and Herbs: Stir in the heavy cream (if using) and fresh basil. Season with salt and pepper to taste.

  7. Serve: Garnish with additional fresh basil and grated Parmesan cheese. Serve hot and enjoy!
