  • Optional mix-ins:

    • 1/4 cup dried fruit (e.g., raisins, cranberries)

Instructions

  1. Prepare the Base: In a large mixing bowl, combine the mashed bananas, almond butter, honey (or maple syrup), vanilla extract, cinnamon, and salt. Stir until smooth and well combined.

  2. Add the Oats: Gradually stir in the rolled oats until fully incorporated. If using mix-ins like chocolate chips, nuts, or dried fruit, fold them in gently at this stage.

  3. Press into Pan: Line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal. Transfer the mixture to the pan and press it down firmly and evenly using the back of a spatula or your hands.

  4. Chill: Place the pan in the refrigerator for at least 1-2 hours to set. For firmer bars, you can also freeze them for 30 minutes.

  5. Cut into Bars: Once set, lift the bars out of the pan using the parchment paper. Cut into 8-12 bars, depending on your desired size.

  6. Store and Serve: Wrap individual bars in parchment paper or store them in an airtight container in the refrigerator for up to 5 days, or freeze for longer storage.
