Ingredients

Scale

For the Soup:

  • 1 tablespoon olive oil (or coconut oil)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon ground turmeric (or 1 tablespoon fresh turmeric, grated)
  • 1 teaspoon cumin powder
  • 1 medium sweet potato, peeled and diced
  • 2 medium carrots, sliced
  • 2 celery stalks, sliced
  • 1 zucchini, diced
  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • 1 can (14 oz) diced tomatoes, undrained
  • 6 cups vegetable broth (low-sodium preferred)
  • 1 cup chopped kale or spinach
  • Juice of 1 lemon
  • Salt and black pepper, to taste

Optional Garnish:

  • Fresh parsley or cilantro, chopped
  • Red pepper flakes (for a touch of heat)

Instructions

Sauté the Aromatics:

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the diced onion and sauté for 3-4 minutes until softened. Stir in the minced garlic, grated ginger, turmeric, and cumin, cooking for 1 minute until fragrant.

Add the Vegetables:

  1. Stir in the sweet potato, carrots, celery, zucchini, and green beans. Cook for 5 minutes, stirring occasionally, to lightly soften the vegetables and enhance their flavors.

Simmer the Soup:

  1. Pour in the diced tomatoes (with their juices) and vegetable broth. Bring the mixture to a boil, then reduce the heat to medium-low, cover, and simmer for 20-25 minutes , or until the vegetables are tender.

Finish with Greens and Lemon:

  1. Stir in the chopped kale or spinach and cook for 2-3 minutes until wilted. Add the lemon juice and season with salt and black pepper to taste.

Serve and Enjoy:

  1. Ladle the soup into bowls and garnish with fresh parsley or cilantro if desired. Sprinkle with red pepper flakes for a hint of spice. Serve hot with crusty bread or crackers for a complete, comforting meal.
