Ingredients

Scale

For the Filling:

  • 1 tablespoon olive oil (or butter)
  • 2 cloves garlic, minced
  • 4 cups fresh spinach (or 1 cup thawed frozen spinach, squeezed dry)
  • 2 tablespoons cream cheese (softened)
  • 2 tablespoons grated Parmesan cheese
  • Salt and black pepper, to taste

For the Salmon:

  • 4 salmon fillets (about 6 oz each), skin-on or skinless
  • 2 tablespoons blackened seasoning (store-bought or homemade blend: paprika, cayenne, garlic powder, onion powder, thyme, oregano, salt, and pepper)
  • 1 tablespoon olive oil (or butter, for cooking)

Optional Garnish:

  • Fresh parsley or dill, chopped
  • Lemon wedges

Instructions

Prepare the Filling:

  1. Heat the olive oil in a skillet over medium heat. Add the minced garlic and sauté for 30 seconds until fragrant.
  2. Stir in the fresh spinach and cook until wilted, about 2-3 minutes. If using frozen spinach, simply mix it into the skillet.
  3. Remove from heat and let the spinach cool slightly. Mix in the cream cheese, Parmesan cheese, salt, and black pepper until well combined. Set aside.

Stuff the Salmon:

  1. Preheat your oven to 400°F (200°C) . Line a baking sheet with parchment paper or lightly grease it.
  2. Pat the salmon fillets dry with paper towels. Using a sharp knife, make a horizontal slit in the center of each fillet, creating a pocket for the filling. Be careful not to cut all the way through.
  3. Spoon the spinach mixture evenly into the pockets of each salmon fillet.

Coat and Cook:

  1. Season the outside of the stuffed salmon generously with the blackened seasoning, pressing gently to adhere.
  2. Heat the olive oil (or butter) in an oven-safe skillet over medium-high heat. Sear the salmon, skin-side up, for 2-3 minutes until the spice coating forms a crispy, blackened crust. Flip the fillets carefully.

Finish in the Oven:

  1. Transfer the skillet to the preheated oven and bake for 10-12 minutes , or until the salmon is cooked through and flakes easily with a fork. The internal temperature should reach 145°F (63°C) .

Serve and Enjoy:

  1. Garnish with fresh parsley or dill and serve with lemon wedges on the side for squeezing over the top. Pair with roasted vegetables, mashed potatoes, or a fresh salad for a complete, elegant meal.
