Ingredients

Scale

For the Filling:

  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 pound ground beef (80/20 blend works best)
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon chili powder (optional for heat)
  • Salt and pepper to taste
  • ½ cup tomato sauce
  • 1 cup shredded mozzarella or Monterey Jack cheese

For the Dough (or store-bought):

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • ½ cup unsalted butter, cold and cubed
  • ½ cup milk (plus more if needed)

For Assembly:

  • 1 egg, beaten (for egg wash)

Instructions

  1. Prepare the Filling: Heat olive oil in a large skillet over medium heat. Add the onion and garlic, sautéing until softened, about 3 minutes. Add the ground beef, breaking it apart with a spoon, and cook until browned. Stir in the cumin, smoked paprika, chili powder (if using), salt, and pepper. Add the tomato sauce and simmer for 5 minutes. Remove from heat and let cool slightly. Stir in half of the shredded cheese.

  2. Make the Dough (or use store-bought): In a mixing bowl, combine the flour, salt, and baking powder. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Gradually add the milk, mixing until a soft dough forms. Knead lightly on a floured surface and divide into 8-10 equal portions. Roll each portion into a circle about 6 inches in diameter.

  3. Assemble the Empanadas: Place a spoonful of the beef filling onto one half of each dough circle. Top with a sprinkle of the remaining cheese. Fold the dough over the filling to create a half-moon shape. Press the edges together firmly, then crimp with a fork to seal. Transfer to a baking sheet lined with parchment paper.

  4. Bake the Empanadas: Preheat the oven to 375°F (190°C). Brush the tops of the empanadas with the beaten egg for a golden finish. Bake for 20-25 minutes, or until golden brown and crispy.

  5. Serve and Enjoy: Let the empanadas cool slightly before serving. Pair with sour cream, guacamole, or salsa for dipping.
