Ingredients

Scale

For the Yellow Rice:

  • 1 tablespoon olive oil
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice (or basmati rice)
  • 2 cups chicken broth
  • ¼ teaspoon ground turmeric (or a pinch of saffron threads for authentic flavor)
  • Salt and pepper to taste

For the Steak and Shrimp:

  • 2 tablespoons olive oil (divided)
  • 1 lb flank steak or sirloin, thinly sliced against the grain
  • 1 lb large shrimp, peeled and deveined
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon cumin
  • Salt and pepper to taste
  • Juice of 1 lime
  • Fresh cilantro, chopped (for garnish)

Instructions

Make the Yellow Rice:

  1. Heat olive oil in a medium saucepan over medium heat. Add the diced onion and cook for 3-4 minutes until softened. Stir in the minced garlic and cook for another 30 seconds until fragrant.
  2. Add the rice, chicken broth, turmeric (or saffron), salt, and pepper. Stir well, bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed. Fluff with a fork before serving.

2. Prepare the Steak and Shrimp:

  1. In a small bowl, mix together smoked paprika, garlic powder, cumin, salt, and pepper. Divide the seasoning evenly between the steak slices and shrimp, tossing to coat.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the steak slices and cook for 2-3 minutes per side, or until browned and cooked to your desired doneness. Remove the steak from the skillet and set aside.
  3. In the same skillet, add the remaining 1 tablespoon of olive oil. Add the shrimp and cook for 2-3 minutes per side, or until pink and opaque. Squeeze fresh lime juice over the shrimp and steak for a bright, citrusy finish.

3. Assemble and Serve:

  1. Spoon the yellow rice onto plates or a large serving platter. Arrange the sliced steak and shrimp over the rice.
  2. Garnish with freshly chopped cilantro and serve with lime wedges on the side for an extra burst of flavor.
