Ingredients
For the Yellow Rice:
- 1 tablespoon olive oil
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 cup long-grain white rice (or basmati rice)
- 2 cups chicken broth
- ¼ teaspoon ground turmeric (or a pinch of saffron threads for authentic flavor)
- Salt and pepper to taste
For the Steak and Shrimp:
- 2 tablespoons olive oil (divided)
- 1 lb flank steak or sirloin, thinly sliced against the grain
- 1 lb large shrimp, peeled and deveined
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- ½ teaspoon cumin
- Salt and pepper to taste
- Juice of 1 lime
- Fresh cilantro, chopped (for garnish)
Instructions
Make the Yellow Rice:
- Heat olive oil in a medium saucepan over medium heat. Add the diced onion and cook for 3-4 minutes until softened. Stir in the minced garlic and cook for another 30 seconds until fragrant.
- Add the rice, chicken broth, turmeric (or saffron), salt, and pepper. Stir well, bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed. Fluff with a fork before serving.
2. Prepare the Steak and Shrimp:
- In a small bowl, mix together smoked paprika, garlic powder, cumin, salt, and pepper. Divide the seasoning evenly between the steak slices and shrimp, tossing to coat.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the steak slices and cook for 2-3 minutes per side, or until browned and cooked to your desired doneness. Remove the steak from the skillet and set aside.
- In the same skillet, add the remaining 1 tablespoon of olive oil. Add the shrimp and cook for 2-3 minutes per side, or until pink and opaque. Squeeze fresh lime juice over the shrimp and steak for a bright, citrusy finish.
3. Assemble and Serve:
- Spoon the yellow rice onto plates or a large serving platter. Arrange the sliced steak and shrimp over the rice.
- Garnish with freshly chopped cilantro and serve with lime wedges on the side for an extra burst of flavor.
