Ingredients
For the Casserole:
- 2 cups cooked, shredded chicken (rotisserie chicken works great!)
- 4 cups riced cauliflower (fresh or frozen)
- 1 cup broccoli florets, chopped small
- 1 cup shredded cheddar cheese (divided)
- ½ cup sour cream (or Greek yogurt for a lighter option)
- ½ cup chicken broth
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon paprika
- Salt and pepper to taste
- Optional: ¼ cup grated Parmesan cheese (for topping)
Instructions
1. Preheat the Oven:
- Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish or a similar-sized casserole dish.
2. Cook the Vegetables:
- If using fresh cauliflower rice, sauté it in a skillet over medium heat with a little olive oil for 5-7 minutes until softened. If using frozen cauliflower rice, microwave according to package instructions and drain excess moisture. Set aside.
3. Assemble the Casserole:
- In a large mixing bowl, combine the cooked cauliflower rice, shredded chicken, broccoli florets, sour cream, chicken broth, garlic powder, onion powder, paprika, salt, and pepper. Stir until evenly mixed.
- Transfer the mixture to the prepared baking dish and spread it out evenly. Sprinkle ¾ cup of shredded cheddar cheese over the top.
4. Bake the Casserole:
- Bake in the preheated oven for 20-25 minutes, or until the casserole is hot and bubbly.
- For a golden topping, sprinkle the remaining ¼ cup of cheddar cheese (and optional Parmesan) over the casserole during the last 5 minutes of baking.
5. Serve and Enjoy:
- Remove from the oven and let cool for 5 minutes before serving. Garnish with fresh parsley if desired. Serve hot and enjoy the creamy, comforting flavors of this low-carb masterpiece!
